Roasted New Potatoes With Garlic, Herbs And Shallots - CDKitchen.com

ingredients

1 1/2 pound small red or white new potatoes
6 shallots, peeled and sliced thin
1 tablespoon butter
2 tablespoons olive oil
3 tablespoons balsamic vinegar
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
2 cloves garlic, minced or crushed
salt and pepper, to taste

directions

Preheat oven to 350 degrees F.

In a large sauce or saute pan, melt the butter and saute the garlic over medium heat until lightly golden. Remove from heat and add the oil, balsamic vinegar, rosemary and thyme.

Scrub potatoes thoroughly and place in large baking dish with shallots. Coat with butter mixture. Bake for 45 minutes or until the largest potatoes test done when poked with a fork.
