Garlic parm potato wedges work with anything. Serve them with a bit of homemade aioli for a classy appetizer, throw them with over easy eggs for breakfast, or use them as a side for a grilled sirloin.
4 large potatoes
1/4 cup butter
1/4 cup freshly grated Parmesan cheese
1 teaspoon minced fresh garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
Preheat the oven to 425 degrees F.
Cut the potatoes in wedges (you can cut them in half first if they are very large).
Place the potatoes in a large saucepan. Add just enough water to cover the potatoes. Turn the heat to high and bring to a boil. Cook for 8-10 minutes or until the potatoes are tender. Drain well.
Combine the butter and Parmesan in a 9x13-inch baking dish. Place in the oven for 5 minutes, stirring once or twice, or until the butter has melted.
Add the garlic, salt, pepper and potatoes to the baking dish. Stir gently to coat the potatoes in the butter mixture.
Place the baking dish in the oven and bake for 10 minutes at 425 degrees F. Turn the potatoes over and continue baking for 10-15 additional minutes or until the potatoes are golden brown.
Serve immediately.
