It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A healthier version of French fries. Jicama strips are seasoned and baked in the oven or air fryer until crisp. Serve with ketchup or other dipping sauce.
1 jicama, peeled and sliced into French fry strips
3 tablespoons olive oil
1/2 teaspoon sea salt
1/4 teaspoon garlic salt
1/4 teaspoon cayenne pepper
1 pinch ground cumin
Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
Place the jicama fries in a bowl of water and microwave for 5 minutes. Let the jicama sit in the hot water for another 2 minutes, then drain well and blot the jicama fries dry with paper toweling.
Place the jicama fries back in the bowl and toss with the olive oil. Spread the fries in a single layer on the baking sheet. Sprinkle the fries evenly with the spices, turning the fries as needed so they are thoroughly seasoned.
Place the baking sheet in the oven and bake at 425 degrees F for 25-30 minutes or until golden brown. Turn the jicama fries over halfway through the cooking time.
Serve hot with your favorite dipping sauces, if desired.
To make raw jicama fries, omit the microwave and baking steps and simply toss the raw jicama pieces with the oil and seasoning and serve.
To make air fryer jicama fries, set the air fryer to 400 degrees F. Follow the recipe up to the oven steps. Place the jicama fries in the air fryer basket and cook for 15-20 minutes or until golden brown, shaking the basket halfway through the cooking time.
