1 quart cucumbers, finely chopped
1 cup hot peppers, finely chopped
2 cups onions, finely chopped
1 cup green bell pepper, finely chopped
1/4 cup salt
3 1/2 cups sugar
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seed

directions

Combine cucumbers, onions, and peppers in a large bowl; sprinkle with salt and cover with cold water. Let stand 2 hours. Drain thoroughly; press out excess liquid.

Combine sugar, vinegar and spices in a large sauce pot. Bring to a boil. Add drained vegetables and simmer 10 minutes.

Pack hot into hot jars, leaving 1/4-inch head space. Adjust caps. Process 10 minutes in boiling water bath.

    I followed the recipe exactly and while it tastes good, all the jars are very watery, nothing thickened. I think there either needs to be more veggies or less cider vinegar. We have to drain the relish to use it. Possibly add cornstarch or something to thicken and give it the correct pickle relish texture? I am cooking at 4200 feet - maybe I needed to boil the mixture longer? I did use pint jars - made a little more than 3 pints and processed for 15 minutes instead of 10 because of the larger jars.

    • Sounds like you needed to boil longer as it definitely isn't that watery when done.

    very good recipe,you get the sweet first then some heat. we used 3 cups of sugar and added a red bell pepper for color. i used 12 jalapenos and it made about 4 pints.
