2 quarts shredded red cabbage
3 red onions, sliced thin
3 large bell peppers, chopped
1 pint vinegar
2 cups sugar
1 tablespoon salt
1 tablespoon celery seed
1 tablespoon yellow mustard seed
1/3 tablespoon turmeric
Combine the shredded cabbage, sliced onions, and chopped peppers in a large, non-reactive bowl. Set aside.
In a non-reactive saucepan, bring the vinegar to a boil over medium-high heat. Stir in the sugar, salt, celery seed, yellow mustard seed, and turmeric. Stir well then remove from the heat.
Pour the vinegar mixture over the cabbage. Stir as needed.
Cover the bowl and place in the refrigerator overnight. When ready to serve, drain the cabbage and vegetables from the marinade and serve the red cabbage relish chilled.
