Would you believe that the secret to delectable fried pickles is...pancakes? Well, pancake mix at least. An easy pancake batter is all you'll need to achieve craveable pickle perfection.
1 cup pickle slices
salad oil
3 tablespoons milk
1 egg, slightly beaten
1 tablespoon pickle juice
1/3 cup dry pancake mix
Place the pickle slices on paper toweling to dry.
Heat the oil in a deep fryer (or heat 1-inch of oil in a deep skillet) to 360 degrees F.
Combine the milk, egg, and pickle juice in a shallow dish. Stir in the pancake mix.
Dip the pickle slices in the pancake mix, coating completely and letting any excess drip off. Add the coated to the hot oil and cook, turning as needed, until golden brown. Remove from the oil with a slotted spoon and let drain on paper toweling.
Serve the french fried pickles hot with your favorite dipping sauces (delicious with ranch dressing).
Try different seasonings in the pancake mix for different results.
For extra crunch, you can try adding breadcrumbs or cornmeal to the pancake mix.
Try cutting the pickles into spears or chips for a different presentation.
If you don't have pickle juice, you can substitute with buttermilk for a tangy flavor.
To keep fried pickles warm while making a large batch, place them on a wire rack in a low oven.
Pancake mix creates a light and crispy coating for the fried pickles, adding a slightly sweet flavor that complements the sour flavor of the pickles.
You can use any type of pickles you prefer, such as dill, bread and butter, or even spicy pickles.
You can use any type of oil with a high smoke point, such as vegetable or canola oil, for frying the pickles.
It's best to let the pickle slices dry on paper towels for at least 15-20 minutes to remove excess moisture and make sure the coating sticks well.
While it's best to coat and fry the pickles immediately for the crispiest results, you can make the batter ahead and store it in the refrigerator for a short time. Stir it before using in case the ingredients separate.
Popular dipping sauces for fried pickles include ranch dressing, spicy mayo, sriracha aioli, or even barbecue sauce.
To store leftovers, let them cool completely, then place them in an airtight container in the refrigerator. Reheat in an air fryer or toaster oven for best results.
It's not recommended to freeze fried pickles, as they can become soggy when reheated.
Shake off any excess batter from the pickles before frying for a thin, crispy coating.
The pickles are done when they are golden brown and crispy on the outside, typically in about 2-3 minutes.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Beer makes batters better, meat more tender, and sauces more flavorful.
