In a cooking rut? Try one of these taste-tested, family-approved recipes using ground beef.

These tasty bites are made by dipping dill pickle chips in a cornmeal batter, then frying them until they're crispy and golden brown. The perfect appetizer for any occasion.

vegetable oil, for frying
1 cup self-rising cornmeal mix
1/4 cup flour
1/2 teaspoon ground black pepper
1 egg, lightly beaten
1/2 cup milk
2 cups dill pickle chips, well drained, patted dry with paper toweling
Heat the oil to 360 degrees F in a deep fryer or deep, heavy pan.
Mix together the self-rising cornmeal, flour, and black pepper in a shallow dish.
In another dish, whisk together the egg and milk.
Dip the pickle chips into the egg mixture. Let any excess drip off then dredge in the cornmeal mixture. Add the coated pickles, in batches, to the hot oil and cook for 3-4 minutes or until golden brown. Remove with a slotted spoon and let drain on paper toweling.
Serve the fried pickles with your favorite dipping sauce (ranch is good).

Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.
Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

The cornmeal mix is a little gritty. I've had fried pickles that use pancake batter but that almost wasn't quite as thick of a coating and it needed to be more. Maybe greater ratio of flour to cornmeal mix.
