Cucumber Relish

ingredients
12 large cucumbers (overripe okay)
8 large cooking onions
8 red bell peppers
1 tablespoon turmeric
1/2 cup pickling salt
3 tablespoons mustard seed
3 tablespoons celery seed
5 cups sugar
5 cups white vinegar
cornstarch
directions
Peel cucumbers; halve lengthwise; scoop out seeds. Wash peppers; remove tongue and seeds. Peel onions; cut in quarters.
Put everything through a mincer with course blade. Add salt to minced veggies and let stand overnight. Drain thoroughly.
Add remaining ingredients; cook 30 minutes, stirring occasionally. Pack in sterilized jars and seal.
