ingredients
1 package (8 ounce size) frozen gnocchi dumplings
1 can (16 ounce size) condensed tomato soup
1 cup chopped fresh spinach
1/2 pound sausage, ground turkey or turkey sausage, cooked
1 envelope (4.5 ounce size) sausage gravy mix
3 cups skim milk
2 tablespoons oil or butter
1 medium onion, diced small
3 stalks celery plus tops, diced small
1 cup frozen diced carrots
3 cups chicken broth, more if you like thinner soup
directions
In a large pot over medium heat, cook the diced celery and the onion in the oil. Cook until tender.
Add the sausage and cook until it is no longer pink.
Add the milk and slowly add the packet of sausage gravy mix, stirring constantly. Cook over medium heat until sauce thickens; this cooks out the flour taste.
Add the condensed tomato soup, chicken broth and chopped spinach. Cook over medium-low heat. Add gnocchi dumplings and cook just until dumplings are tender, about 10 minutes. Stir occasionally but carefully so you don't break dumplings up.
