This easy tomato soup is all about convenience without sacrificing taste. With canned tomatoes and just a handful of additional ingredients, you'll have a delicious soup in no time.
1 can (28 ounce size) diced tomatoes, undrained
1 small onion, grated
1 bay leaf
1 teaspoon sugar
salt and pepper, to taste
2 tablespoons all-purpose flour
1/2 cup dry milk powder
1 1/2 cup cold water
Combine the tomatoes, onion, bay leaf, sugar, salt, and pepper in a saucepan over medium heat. Cook for 10 minutes or until the onion is soft.
Remove the bay leaf and press the mixture through a strainer to remove any skin or seeds from the tomatoes. Return the tomato mixture to the saucepan.
Stir together the flour and dry milk powder in a medium bowl. Whisk in the cold water and mix until smooth. While stirring, slowly add the flour mixture to the saucepan.
Cook the soup, stirring frequently, for 10-15 minutes or until the soup has thickened.
Serve hot.
