4 slices bacon
1 small onion
1 tablespoon butter or margarine
2 tablespoons flour
1 can (15 ounce size) ready-cut tomatoes
1 dash black pepper
1 dash salt
1 bay leaf
2 cups milk
Cook the bacon in a medium-size pot over medium-high heat. When the bacon is crisp, about 10 minutes, remove it from the pot. Set aside to drain on paper towel. Drain the bacon fat into an empty can and discard it.
Peel the onion and chop it into 1/2-inch pieces. Melt the butter or margarine in the same pot over medium heat. Don't worry about any bacon residue, as it will serve to flavor the soup. Add the onion and cook for about 5 minutes, stirring occasionally, until the onion begins to soften. Add the flour and stir until it is fully absorbed into the onion mixture. The stirring is important.
Add the tomatoes and their liquid, black pepper, salt and bay leaf and bring the mixture to a boil over high heat. Turn down the heat to medium and cook, uncovered, for 2 minutes. The mixture will begin to thicken. Add the milk and heat until the soup is hot but not boiling.
Cut or break the cooked bacon into bite-sized bits and drop into the soup. Remove and discard the bay leaf, and serve.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Love buffalo wings? Get that same hot, zippy flavor in everything from deviled eggs to enchiladas. And of course: wings.

Growing up My Mother made this soup. It is an old family recipe. The only difference is Mom used the bacon grease instead of butter and cream instead of milf. This has always been a big favorite in our family of 12 children. We called it "Cream of Bacon Tomato Soup" This is a great tasting soup 5 stars for sure! Thanks for posting it!
Why would you discard the bacon fat only to replace it with butter? You'd get a better bacon flavor by cooking the onion and garlic in the bacon fat and emulsifying it into the soup. Well that's the way I'm making the recipe cheaper and better tasting.

Yum O! I loved this! Lesson learned: cook the first-not with the onions, they make the bacon too moist. Also-I used fresh tomatoes, added leeks and blended the soup before adding milk. Delicious! So smoky! I scraped the carmelization off the bottom of the pan-you want that tasty stuff. Nice bacon flavor, great recipe! (Also uploading a picture!)
