ingredients


Crostini

20 slices baguette (1/2-inch thick)
4 tablespoons olive oil
crushed garlic, optional

Topping

3 tablespoons olive oil plus more for drizzling
1 small onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
4 medium to large sage leaves, finely chopped
1 can (15-ounces) cannellini beans, rinsed and drained
2 tablespoons water
salt and black pepper, to taste
1 ripe tomato, seeded and diced, optional

directions

For Crostini: Preheat the oven to 350 degrees F.

Place baguette slices on a baking sheet, brush with olive oil and, if desired, sprinkle with garlic. Bake for about 10 minutes or until the slices are crisp and lightly golden. Remove them from the oven.

For Topping: In a medium saucepan, heat the 3 tablespoons of olive oil over low to medium heat. Add the onion, garlic and sage and cook about 5 minutes or until the onion is soft. Add the beans, water, salt and pepper. Cook for about 10 minutes.

Mash the mixture with a spoon or fork into a rough puree.

Spread about 1 tablespoon of the bean mixture on each crostini. Top each with tomato dice and, if desired, a drizzling of olive oil. Serve.
