serves/makes:

ready in:
  1-2 hrs

ingredients

1 package large tortillas
1/2 pound bacon
8 ounces cream cheese, softened
1 package (20 ounce size) frozen chopped spinach, thawed and drained
1/2 cup mayonnaise
1/2 cup chopped green onions

directions

Cook bacon until crisp; drain on paper towel and crumble when cool.

In medium bowl, mix together softened cream cheese, spinach, mayonnaise, bacon and green onion.

Spread a thin layer of filling over tortillas within 1 inch of edges. Roll up tightly to enclose filling. Wrap rolls individually in plastic wrap. Repeat for all tortillas. Refrigerate for at least one hour or overnight.

Preheat oven to 375 degrees F. Remove rolls from plastic wrap. Cut rolls diagonally into 3/4 inch slices. Arrange with filling side down on a large ungreased baking sheet. Bake for 6-8 minutes or until light golden brown and heated through.
