Mini Baked Corn Dogs

1 cup cornmeal, coarse ground
1 cup flour
1 1/2 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 egg
1 cup milk
1 tablespoon butter, melted
4 Kosher All natural hot dogs


Preheat oven to 350 degrees F. Spray mini muffin trays with non stick spray. In a medium bowl, whisk together cornmeal, flour, baking powder, salt and sugar.

In a large bowl, whisk egg to scramble then whisk in milk followed by melted butter. Add the dry ingredients all at once whisking just until all ingredients are combined, it may be a little lumpy still. Cut hot dogs into 1 inch "coins". Fill muffin tins halfway with batter. Nestle one hot dog piece in each muffin cup. Bake for 15-17 minutes until muffins are golden brown and toothpick inserted in muffin portion comes out clean.
