ingredients
8 jalapeno peppers, seeded with stem removed
2 medium onions, peeled
1/2 cup low-fat buttermilk
1 box (5.75 ounce size) Hot and Spicy Flavored Shake 'N Bake coating mix
directions
Heat oven to 400 degrees F.
Cut the jalapenos and onions into long strips (julienne style). Place a piece of foil (dull side up) onto a large cookie sheet (or you can use 2 small cookie sheets). Place the onions and jalapenos into the buttermilk a little at a time. Remove from the buttermilk and toss with the coating mix. Place on the cookie sheet in a single layer. Continue until all of the onions and jalapenos have been used. If you have any remaining coating mix, sprinkle it on top.
Spray the tops lightly with non-stick cooking spray. Bake for 25- 30 minutes or until golden and the veggies are tender.
