It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Nachos are always a hit. These beefy and cheesy nachos can be topped with your favorite add-ons such as jalapenos, sour cream, and guacamole.

1/2 pound ground beef
1/2 cup salsa
4 cups tortilla chips
1 cup shredded cheddar cheese
Accompaniment
sliced green onions
chopped tomatoes
sliced jalapeno peppers
sliced black olives
sour cream
guacamole
chopped green bell peppers
Heat a skillet over medium-high heat. Add the ground beef and brown, stirring constantly, until the meat is cooked.
Add the salsa to the skillet and let cook for 2 minutes.
Meanwhile, arrange the tortilla chips on a microwave-safe plate. Top with the ground beef and salsa mixture and sprinkle evenly with the cheese.
Microwave on HIGH for 3 minutes or until the cheese is melted. If the microwave doesn't have a turntable, turn the plate 1/4 turn every minute.
Top the cheesy beef nachos with any desired toppings and serve hot.
