ingredients

1 cup Cheddar cheese, grated
2 tablespoons unsalted butter, softened
1/2 cup flour
1/8 teaspoon cayenne pepper, or paprika for milder flavor
24 pimiento-stuffed olives

directions

Drain olives and pat dry with towels. Combine cheese and butter in a bowl. Add flour and cayenne and blend until well mixed. Drop the dough by tablespoons onto wax paper and wrap or mold each piece of dough around an olive, covering it completely.

Bake the wrapped olives on a baking sheet in the middle of a preheated 400 degrees F oven for 15 minutes or until golden. Serve warm.

Love this recipe and only need to add that (since my sheet pans are a bit abused) I found it helpful to bake the balls on parchment paper to prevent sticking. These are always a bit hit.

My mom maid these when I was younger. She would use finely shredded cheddar and the dough was easier to mold and yummier. My daughter and I made these for the superbowl game and now tonite. Very simple and good.

I made these for a party and they were a HUGE hit! I ended up with close to 60 pieces (using small olives) and there were no leftovers. The recipe was easy to follow as written but it took a bit of time for the dough to come together.

These are just like the recipe I grew up with - the only thing we add is some seasoning salt. I don't know what went wrong with the first reviewers attempt but when this recipe is followed and mixed as directed, there shouldn't be grease or glop unless perhaps they completely melted the butter - you need it softened and work it into the cheese and flour and it takes a little while to get the dough consistency, don't use fully melted butter - in fact this is pretty much a no-brainer beginner-capable recipe, no matter what serving size you plug in.

Cheese balls, I wish....more like cheese splats, picture a olive cyclops emerging from a ocean of greasy cheese ,(after spending 45 min. prepping) with 14 dinner party guests wondering which appetizer really was the "cheese ball with olive"... how bout 8 oz. instead of 18 oz.? Please everyone, check your quantities or forget about quality.
