ingredients
flour
1 egg, beaten
breadcrumbs
oil
1/4 pound pitted Kalamata olives
1/4 pound pitted Sicilian olives
grated Parmesan cheese
directions
Heat enough oil to cover the skillet.
While oil is heating, dredge the olives in flour, then the egg and lastly, the breadcrumbs.
When the oil is hot, add the olives and cook until golden, about two minutes. Drain and dust with Parmesan cheese. Serve warm.
