Chickpea Dip Recipe

Ingredients:
2 cans chickpeas (15-oz. size) drained
1 clove garlic -- roughly chopped
1/2 lemon, juice of
1 tablespoon water
1/4 cup extra-virgin olive oil
salt and freshly ground pepper
1 package melba toast
Directions:
Place the chickpeas, garlic, lemon juice and water in a food processor. With the motor running, drizzle in the olive oil, and puree until smooth. Season with salt and pepper. Serve with the melba toasts.
