Catfish Spread Recipe

Ingredients:
8 ounces Catfish,Fresh
1 Onion,Sliced
1 Lemon,Sliced
3 ounces Cream Cheese,Softened
2 tablespoons Sour Cream
1/4 cup Onion,Chopped
1/3 cup Parsley,Chopped
1/4 cup Cilantro,Chopped
2 tablespoons Lemon Juice
Salt,To Taste
Pepper,To Taste
Tabasco,To Taste
Directions:
To poach the catfish, place in a skillet on a bed of sliced onions and half of the fresh lemon slices. Add water to cover the onions. Top the fish with the remaining lemon slices. Cover and simmer for about eight minutes. Allow fish to cool.
In a food processor, add cream cheese until blended but not pureed, then add fish. Pulse several times. Add sour cream, chopped onions, parsley, cilantro and lemon juice. Salt and pepper to taste. Add a few drops of hot sauce. Blend again until the mixture is creamy. Add more lemon juice and seasonings to taste. Serve with small, toasted breads, crackers or sliced apples.
