Smoked Salmon Nachos

ingredients

1 ripe avocado
1 whole scallion, finely chopped
1 teaspoon fresh lime juice
freshly ground black pepper
1/4 pound smoked salmon
16 baked corn chips
1 tomato, seeded and finely chopped
1 jalapeno pepper, seeded and minced

directions

Mash the avocado in a bowl. Mash in the scallion, lime juice, and pepper to taste. This may be done up to 8 hours ahead.

Cut the salmon into 16 pieces, each about 2 inches long.

Place a piece of the salmon on each corn chip. Dollop 1 teaspoon of the avocado mixture in the center of the nacho.

Top with 1/2 teaspoon of the tomato and 1/4 teaspoon of the jalapeno. Serve immediately.
