Make-ahead party skewers made with cheese tortellini, salami, and stuffed olives, all marinated in Italian salad dressing before serving.



8 ounces fresh cheese tortellini
1/2 pound salami, thinly sliced and cut in 1-inch strips
5 ounces pimiento-stuffed green olives, drained
1/2 cup Italian salad dressing, more if needed
Cook the tortellini to al dente as directed on the package. Drain well then rinse the pasta in cold water. Drain well again and place the pasta in a large bowl.
Add the salami, olives, and salad dressing to the bowl and mix gently. Cover the bowl and refrigerate for 4 hours or overnight.
When ready to serve, thread the tortellini, salami, and olives on 4-inch skewers. Drizzle with additional salad dressing if they seem dry (the pasta will have absorbed most of the dressing).

I made these for the few friends we had over on New Year's. Super quick and easy to make, but a little more elegant than just chips and dip. Everyone seemed to enjoy them, and I like the little tang that the stuffed olive added.

Very easy to make and tasty. I love appetizers that can be made ahead of time when I'm throwing a party - and these are perfect party food. The pasta absorbs a lot of the flavor of the salad dressing so make sure you use a good quality dressing. You also don't want one too flavorful as it could really takeover the whole dish. I used a light flavored vinaigrette that was quite good in the end result.
