ingredients

1 pound frozen tater tots
1/2 pound diced ham
1/2 cup chopped onion
1/2 cup diced green bell pepper
3/4 cup shredded Cheddar cheese
6 eggs, beaten
1/2 cup milk
salt and pepper, to taste

directions

Lightly grease the inside of a crock pot.

Layer 1/3 of each of the following ingredients in order: tater tots, ham, chopped onion, green bell pepper, Cheddar cheese. Repeat layers two more times, ending with the cheese.

Combine the eggs and milk in a bowl and whisk well until combined. Add salt and pepper to taste.

Evenly pour the egg mixture over the layered ingredients in the crock pot. Cover the crock pot and cook on low heat for 3-5 hours (older crock pots will need to cook longer).

Serve hot.

Crock Pot or Slow Cooker: For cooking the breakfast casserole over a long period of time on low heat.

Whisk: For combining the eggs and milk until smooth.

Mixing Bowl: To combine the eggs and milk, as well as for adding salt and pepper before pouring over the casserole layers.

Measuring Cups: For measuring the milk, onion, bell pepper, and cheese.

Sharp Knife: To dice the ham, chop the onions, and dice the green bell pepper.

Grater: For shredding the Cheddar cheese before layering it over the other ingredients in the casserole.

    I have not made this yet but plan to for Fathers Day. Another crockpot recipe I have say to put a paper towel between the lid & the crock while cooking. This will absorb the excess moisture so the casserole will not be mushy. So I will probably do this. Don't like mushy breakfast casseroles. Will rate it after I make it.

    Excellent!! TY. I used pre-browned tater tots and mine cooked in 3.5 hours on the lowest setting. I am going to work on scaling the recipe up because I have a larger crock pot-but I hope to freeze the leftovers for later use. I have gout, so will use bacon bits in moderation-so any 'extra' water content will go towards hydrating the bacon bits. Sounds like a match made in heaven::>

    I was looking for a slow cooker hash brown recipe and realized my husband bought tater tots instead of shredded hash browns not realizing what I was cooking. I saw this and thought "breakfast saved!" Only change I made was to use sliced, cooked sausage and some chopped/fried bacon instead of the ham. Seems like a very flexible recipe so I'll probably experiment with other ingredient substitutions just to change things up. Oh, and I cooked it on low for 5 hours and it was good. Totally depends on your crock pot I've found.

    I' m thinking this sounds easy and good. However, after reading comments of mushy or dissolved tater tots, I believe I will fully cook tater tots in oven before adding them to this recipe to be hot and ready for Xmas morning.

    6 hours on low in my crock pot and it was AMAZINGLY GOOD!! I don't recommend cooking it for as long as the directions say. Sounds like they had a really old slow cooker!

    The flavor was good but the tater tots kinda dissolved (are they supposed to?). I don't know that this needs to cook so long. I only cooked it 8 hours and that was maybe even too cooked.

    I made this in a counter roaster so it didn't have layers, turned out very quiche-like and delicious!! I cooked it at 200 degrees was perfect 5 hours later. Great ability to change up ingredients so this recipe is a definite keeper!

    This recipe was ridiculously easy and turned out VERY good. I had to adjust a few things because I used a larger sized crock pot, but it came out perfectly. I also added some fresh tomatoes (just because they were in the house!) to each layer and that added some extra color and flavor.
