ingredients

1/2 pound bulk sausage
10 slices bread
6 beaten eggs
1 1/2 cup skim milk
salt & pepper, as desired
1 tablespoon yellow mustard
2 cups grated sharp cheddar cheese

directions

Grease the inside of the crock pot.

Heat a skillet over medium-high heat. Add the sausage and cook, stirring frequently, until browned. Drain off any excess fat.

Cut the bread into cubes.

In a bowl, whisk together the eggs, milk, salt, pepper, and mustard until blended.

Make layers of the bread, cheese, and sausage in the crock pot. Pour the egg mixture over the all.

Cover the crock pot and cook on low heat for 4 hours or until the egg mixture is set.

Serve hot.

crock pot notes

Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.

recipe tips

Use sharp cheddar for a deeper cheese flavor, but feel free to mix in other cheeses like Monterey Jack or Gouda for variety.

If you prefer a firmer texture, reduce the milk by a quarter cup.

For an extra layer of flavor, mix in herbs such as chives, parsley, or thyme into the egg mixture.

Try using a liner in the crock pot for easier cleanup.

To avoid a soggy bottom, make sure the bread is not too fresh. Slightly stale bread absorbs the egg mixture better without becoming too mushy.

If your slow cooker has a warm setting, switching to warm after cooking can keep the casserole at a nice temperature without overcooking it if not serving immediately.

For a spicier version, add diced jalapenos to the sausage while cooking or use a spicy sausage variety.

Make sure the sausage is well-drained after browning to prevent the casserole from becoming greasy.

common recipe questions

Can I use any type of bread for this casserole?

Yes, you can use any type of bread. However, day-old bread or slightly dried out bread works best as it absorbs the egg mixture more effectively, resulting in a better texture.

What type of sausage should I use?

Bulk sausage is specified for its ability to be crumbled and evenly distributed. You can use pork, turkey, chicken, or vegetarian sausage based on your preference.

Is it possible to prepare this casserole the night before?

While the casserole is designed to cook in the morning, you can prepare the ingredients the night before. Brown the sausage, cube the bread, and mix the egg mixture. Store them separately in the refrigerator and assemble in the crock pot in the morning.

Can I add vegetables to this casserole?

Adding vegetables like diced bell peppers, onions, mushrooms, or spinach can add flavor and nutrition. Cook them slightly before adding to the casserole to remove any excess water.

How can I tell when the casserole is done?

The casserole is done when the egg mixture is set and the top is slightly dry. A knife inserted in the center should come out mostly clean.

How do I store leftovers?

Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days. Reheat portions in the microwave or oven until thoroughly warmed.

Can I freeze this breakfast casserole?

Yes, you can freeze the casserole either in individual portions or as a whole. Wrap it well to prevent freezer burn and store for up to 2 months. Thaw overnight in the refrigerator and reheat as needed.

  1. Pamela REVIEW:

Make sure to use a crock pot that doesn't cook real hot or use the warm setting if you cook this overnight. Made this the first time and it got overcooked so then the next time I cooked it on low for 2 hours then on warm the rest of the time and it was very good.
