Turkey Monte Cristo Sandwich With Pepper Jelly

This monte cristo sandwich is a game changer! It's made up of turkey, spinach, and swiss cheese with a layer of pepper jelly (spicy or mild, your choice).

ingredients
8 slices bread
4 tablespoons green pepper or jalapeno jelly (mild or hot)
12 ounces shaved turkey breast
1 cup baby spinach leaves
4 slices (1 ounce size) Swiss cheese
4 eggs
1/4 cup 2% milk
1 teaspoon Dijon mustard
non-stick cooking spray or olive oil
powdered sugar, optional
directions
Spread half of the slices of bread with one tablespoon each of the pepper jelly on one side. Top each slice with 3 ounces of turkey, 1/4 cup spinach, and 1 slice Swiss cheese. Place the other slices of bread on top.
Whisk together the egg, milk, and Dijon mustard until completely blended. Place in a shallow dish.
Carefully dip each sandwich in the egg mixture to completely coat. Turn and coat the other side completely.
Heat a griddle or large skillet over medium high heat. Coat with cooking spray or olive oil. When hot, cook each sandwich for 3-5 minutes per side until golden brown and the cheese is melted.
Place each sandwich on an individual plate and lightly dust with sifted powdered sugar (if using).
