Easy Layered Vegetable Bake

ingredients
1 package (6 ounce size) stuffing mix for chicken
5 eggs, divided
1 1/2 cup shredded Cheddar & Monterey Jack cheese blend, divided
1 medium onion, chopped
1 package (10 ounce size) frozen chopped spinach, thawed, drained
1/2 small red bell pepper, cut into strips
2 medium tomatoes, sliced
directions
Preheat oven to 400 degrees F.
Prepare stuffing mix as directed on package. Add 1 egg, mix until well blended. Press firmly onto bottom of greased 9-inch square baking dish, sprinkle with half of the cheese. Set aside.
Spray medium nonstick skillet with cooking spray. Add onions, cook and stir 5 minutes or until tender. Remove from heat, stir in spinach. Spoon half of the spinach mixture over cheese layer in baking dish, top evenly with peppers.
Cover with layers of the remaining cheese and remaining spinach mixture. Beat remaining eggs lightly, pour over ingredients in baking dish. Top evenly with tomatoes.
Bake 40 to 45 minutes or until center is set.
