A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

It doesn't get much easier than this. Chopped artichoke hearts mixed with breadcrumbs and parmesan and baked until nice and crispy. Awesome for changing up your normal side dish rotation.

3 cans (15 ounce size) water-packed artichoke hearts
1 package (15 ounce size) bread crumbs
1 cup olive oil
3 ounces grated Parmesan cheese
salt & cayenne pepper to taste
Preheat the oven to 350 degrees F.
Drain the artichokes and reserve the liquid. Cut the artichoke hearts into quarters and add to a large bowl.
Stir in the bread crumbs, olive oil, reserved liquid from the artichokes, and Parmesan cheese. Add salt and cayenne pepper as desired.
Pour the artichoke mixture into an ungreased 8x8-inch baking dish.
Bake at 350 degrees F for 45 minutes or until bubbly and heated through.
Serve the artichoke casserole hot.
Drain the artichokes well to prevent the casserole from becoming soggy.
Taste the mixture before adding it to the baking dish and adjust the seasoning as needed.
Let the casserole stand for a few minutes after baking for easier serving.
Experiment with different types of bread crumbs, like panko, for different textures.
Yes, you can use fresh artichokes. They need to be cooked and prepared first, removing the leaves and chokes, leaving only the hearts.
Olive oil adds flavor, but you can substitute it with another type of oil or even melted butter.
Grated Romano or Asiago cheese are good substitutes for Parmesan.
Yes, ingredients like garlic, onions, or herbs like basil or oregano can be added for extra flavor.
Broil the casserole for a few minutes at the end of baking, watching closely to prevent burning.
Yes, assemble the casserole ahead of time and refrigerate. Add a few extra minutes to the baking time if baking from cold.
Store in an airtight container in the refrigerator for up to 3 days.
It doesn't really freeze well because of the breadcrumbs, they tend to become soggy.

Shrimp Scampi: Serve this casserole alongside shrimp scampi for a nice seafood pairing. The richness of the casserole balances nicely with the garlic and butter sauce of the scampi.
Crispy Chicken Tenders: Pair the casserole with crispy chicken tenders to create a satisfying contrast in textures. The tender, juicy chicken and crunchy coating complement the crispy artichoke dish.
Grilled Salmon: The casserole can be a rich side to grilled salmon. The smokiness of the fish goes well with the savory and cheesy flavors of the casserole.
Spinach Salad: A fresh spinach salad with a vinaigrette dressing can balance the heaviness of the casserole. The crisp and peppery greens will provide a refreshing contrast.
Garlic Bread: Serve garlic bread alongside the casserole for a classic pairing. The bread can be used to scoop up the casserole while adding garlic flavor to every bite.
Roasted Potatoes: Crispy roasted potatoes can complement the casserole nicely, offering a hearty companion with a different texture and flavor that works well together.
