Sauteed Prawns

ingredients
1 tablespoon olive oil
2 teaspoons dried basil
1 shallot, peeled and chopped
1/2 pound prawns, cleaned, leave on tails
1 lemon
sea salt
freshly ground black pepper
6 fresh parsley sprigs, chopped, no stems
directions
Heat oil in a saute pan or skillet, add basil to warm in the oil, add shallot and cook over low heat until soft, not brown.
Stir prawns into pan and cook with shallot and basil 5 minutes over low heat (prawns will turn pink as they cook).
Squeeze lemon juice into pan over prawns. Season to taste and sprinkle parsley over prawns, take to table to serve in pan.
