Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Looking for an easy rice side dish that doesn't come from a packaged mix? Check out this recipe. Great southwestern flavors with fresh jalapenos, avocados, salsa, and cilantro.
1 cup white rice, uncooked
1/2 cup chopped onions
1/4 cup chopped jalapenos (or other peppers)
2 tablespoons butter or margarine
2 cups chicken broth
1/2 teaspoon cumin
1 avocado, diced
1/2 cup salsa
2 tablespoons chopped cilantro
Saute the rice, onion, and jalapenos in the butter until the rice turns opaque.
In a large saucepan, heat the broth to boiling, add the cumin and rice. Reduce the heat, cover and simmer until the rice is tender, about 25 minutes.
Add the avocado and the salsa and mix well. Garnish with the cilantro and serve.

Everyone raved about the Southwestern Avocado Rice. It was a huge success. I used a few red bell peppers. I would definitely give this recipe a big thumb's up. Jan
