Saffron Orange Rice With Pine Nuts

ingredients
2 tablespoons olive oil
1 clove garlic, crushed
1 large onion, chopped
1/4 teaspoon saffron threads
2 teaspoons grated orange rind
1/2 teaspoon ground cinnamon
1 teaspoon cumin
2 cups basmati rice
4 cups chicken stock
1/4 cup dried currants
2 tablespoons chopped fresh parsley
1/3 cup pine nuts, toasted
directions
Heat oil in pan, add garlic and onion, and cook, stirring, until onion is just soft. Add saffron, rice and spices.
Add rice, stir over heat until rice is coated in oil. Stir in stock and simmer, covered with tight fitting lid, for 12 minutes.
Remove from heat and let stand, covered, for 10 minutes. Stir in currants and parsley. Sprinkle with nuts. Top with shredded orange rind, if desired.
