ingredients

1 1/2 tablespoon olive oil
1/4 cup onion, diced
1/2 teaspoon garlic, minced
1 cup white rice
1 1/2 cup chicken broth
1/2 teaspoon saffron
1 1/2 teaspoon parsley, chopped

directions

Heat the oil in a heavy saucepan. Add the onion and garlic and cook until just soft. Toss in the rice and cook for 3 minutes, stirring frequently. Add the broth, saffron, and parsley. Cover and reduce the heat to low.

Cook for 15-18 minutes or until the liquid is absorbed.

Fluff with a fork before serving.

cook's notes

Try to avoid the powdered saffron. The "thread" type gives a truer flavor.

    My store never has saffron in stock it seems so I used a pinch of turmeric instead. Very pretty rice and good flavor. Used a good homemade chicken stock which had good rich flavor.

    Made this today and while it goes together quickly and is very easy, I found it lacking in flavor. I love all the ingredients so I was surprised. If I make it again I will perhaps add more spices. Also I will add 2 cups of chicken broth as 1 1/2 left me with dry rather crisp rice. It is a good recipe to build on.

    Awesome rice recipe. The chicken broth makes it absolutely delicious! I only used a pinch of saffron threads (since it's so expensive) and only about 1 tbs of fresh parsley. And I didn't use any food coloring because I didn't care if it was yellow or not. It didn't take as long to cook as stated in the recipe. It's so simple to make and so good. This will be a staple food for us. Thanks for sharing this recipe!
