Ingredients:
1 stalk celery
1 large bell pepper
2 bunches green onions
OR
1 large onion
1/2 cup de-fatted chicken broth
1 can condensed mushroom soup
1 can (small size) diced tomatoes and chilies
1 package frozen crawfish meat
1 cup white wine
6 cups cooked rice

Directions:

Dice fresh vegetables. Let simmer in half of the broth. Stir in remaining broth, soup and tomatoes and chilies. Let simmer 5-10 minutes.

Add frozen crawfish, cover and let simmer over medium heat, about 5 minutes. Stir to separate and add white wine.

Cover and let cook down another 5-10 minutes. Turn off heat and let stand 3-5 minutes. Serve over cooked rice.
