3 large baking potatoes 1/2 cup olive oil 2 cloves garlic, minced 1 pinch kosher salt 1/4 cup freshly grated Parmigiano Reggiano cheese black pepper, to taste
directions
Preheat the oven to 375 degrees F. Grease a rimmed baking sheet.
Scrub the potatoes and cut into quarters lengthwise. Place the potatoes in a large bowl.
Add the olive oil, garlic, and salt to the bowl. Mix well to coat the potatoes in the oil. Transfer the potatoes to the baking sheet and spread them out so they are in a single layer.
Place the potatoes in the oven and bake at 375 degrees, turning them with a spatula every 15 minutes until they are browned and soft.
Remove the baking sheet from the oven and sprinkle the potatoes with the cheese and black pepper, to taste.
Serve hot.

EXCELLENT flavor and so easy to prepare. Do them on sprayed foil for no cleanup.

I added the cheese during the last 15 minutes and added a little garlic powder. Excellent recipe and potatoes were very tender after 40 minutes.
