Herb-roasted new potatoes are a simple and delicious side dish that can be enjoyed any time of year. New potatoes are oven-roasted with a variety of herbs, resulting in a crispy exterior and a fluffy interior.

ingredients

1 pound new potatoes
1/4 cup chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
3/4 cup grated Parmesan cheese

directions

Preheat the oven to 425 degrees F. Lightly grease a rimmed baking sheet.

Scrub the potatoes and pare as needed. Cut the potatoes into wedges. Combine the potatoes, basil, oregano, olive oil, salt, and pepper in a bowl. Mix well.

Spread the potatoes out in a single layer on the greased baking sheet. Sprinkle evenly with the parmesan cheese.

Place the potatoes in the oven and bake at 425 degrees F for 20-25 minutes or until the potatoes are browned and cooked through.

Serve the herb-roasted new potatoes hot.

    I'VE MADE THIS AND IT'S SO EASY. COMES OUT TASTING DELICIOUS. MY FAMILY ENJOYS IT WITH KETCHUP AS A DIP. THEY LOVE IT. WE SOMETIMES EAT IT AS A SNACK, AS WELL AS A SIDE DISH. THANK YOU FOR THIS EASY RECIPE.

    My husband was raving over this. I did it pretty much exactly as directed but I used more parmesean and after they were done I put the potatoes in a bowl and sliced up half a stick of butter over the top and covered in foil until we were ready to eat. I stirred it up and it was WONDERFUL.

    This was quite easy to make and the potatoes were tasty. One reviewer thought they could have used a more buttery taste. You could use half butter and half olive oil (the oil will keep the butter from burning) instead of all oil.
