Wedges are the way to go at home and are quicker than cutting fries. Plus, grilling them keeps them healthier. These would be perfect with a creamy condiment like spicy mayo or aioli.
4 large idaho potatoes
SEASONING
1/4 cup vegetable oil
2 cloves garlic, crushed or minced finely
1 1/2 teaspoon sweet paprika
1/2 teaspoon salt
fresh ground black pepper, to taste
Combine oil and seasonings in resealable plastic food storage bag. Seal and shake to mix ingredients. Scrub potatoes with soft brush. Cut each potato lengthwise in half and cut each half into 4 long wedges. Pat dry and add to bag.
Seal. Turn potatoes in bag to coat potatoes.
Remove potatoes from seasoned oil and place over medium-hot grill (or in special perforated grill basket) for 15-20 minutes or until tender, turning occasionally.

Anytime we grill we pretty much make these now. Super easy and the turn out so delicious. We use a fine grate to grill them on while the ribs or burgers cook on the regular grates.

I have just now had time to rate this recipe. We have enjoyed these Grilled Potato Wedges for 2 years. All family and friends truly love them. When grilling and potatoes are added, these are usually asked for.
