Quinoa Meatballs

ingredients
3 tablespoons olive oil
3 tablespoons dried onion flakes
1/2 pound lean ground beef
1/2 pound ground turkey
1 1/2 cup cooked quinoa
1 egg
3 tablespoons parsley leaves
1/2 tablespoon sea salt
1/2 teaspoon paprika
1/2 teaspoon ground coriander
3/4 tablespoon black peppercorns, ground
barbecue sauce
directions
Cook the quinoa according to the instructions on the package.
Mix all the ingredients except barbecue sauce in a bowl using your hands. Roll into balls and place in greased baking pan. Bake at 350 degrees F for 20 minutes or until cooked through.
Serve with barbecue sauce.

The quinoa was a very unexpected success in this recipe! The meatballs held together great and were very moist and flavorful. We served them with a simple barbecue sauce for dipping and they made a great appetizer.
