It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Meatballs
3 ounces tomato sauce
1/3 cup dry bread crumbs
1 egg, lightly beaten
1/8 cup onion, finely chopped
1/8 cup green bell pepper, finely chopped
1/4 teaspoon salt, optional
1/8 teaspoon dried thyme, crushed
1/8 teaspoon dried marjoram, crushed
1 pound ground beef
Sauce
1 cup spicy Bloody Mary mix
1 1/2 cup tomato sauce
1 cup bock beer
1 cup Guinness stout
1/2 cup packed brown sugar
1 1/2 cup canned crushed tomatoes, undrained
Meatballs: In a large mixing bowl, combine first eight ingredients. Add ground beef and mix well. Shape into meatballs (use a small cookie scoop if available) and place on broiler pan so grease can drain while cooking. Bake uncovered in 350 degrees F oven for 30 minutes.
Sauce: In a large, heavy saucepan, combine Bloody Mary mix, tomato sauce, beer, stout, sugar and canned tomatoes.
Place over medium heat and cook, stirring until sugar is dissolved. Bring to a boil; add meatballs. Reduce heat and simmer 1 hour or place in crockpot until heated through.

Tiny, tender meatballs are simmered in a robust and flavorful sauce making for a great appetizer. We simmered the cooked meatballs in the sauce in a crockpot for ease, but this could also be done stovetop or even in the oven. The sauce wasn't overly beer flavored despite the quantity added. The seasoning of both the meatballs and the sauce was perfect.
