Cappuccino Macaroons

ingredients
3 egg whites
1 teaspoon lemon juice
2/3 cup sugar
4 tablespoons instant cappuccino mix
3/4 cup ground almonds
1/4 cup chocolate-covered coffee beans
directions
Preheat the oven to 325 degrees F.
Beat egg whites and lemon juice until very stiff. Drizzle in sugar while stirring constantly. Sift in cappuccino mix and fold in almonds.
Place the batter in a pastry bag with a plain tip and pipe onto a baking sheet in walnut-sized mounds about 2-3 inches apart. Top each mound with 1 chocolate-covered coffee bean and bake in the oven (middle rack) for 20-25 minutes.
