Pasta With Marinara Sauce And Ricotta

ingredients
3 slices bacon, diced
1 onion, chopped
1/2 teaspoon red pepper flakes
1 jar (14 ounce size) marinara sauce
1 container (15 ounce size) part-skim ricotta cheese
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley
1 pound penne pasta or ziti
directions
Cook bacon in large saucepan until crisp; drain on paper towel and set aside.
Discard all but 1 tablespoon drippings from skillet. Add onion and red pepper flakes; cook over medium heat, stirring occasionally, until onion is tender, about 5 minutes. Add marinara sauce and bring to boil; lower heat and let simmer while preparing rest of ingredients.
Meanwhile, in mixer bowl, beat ricotta, Parmesan, salt and pepper until creamy. Stir in parsley; set aside.
Cook pasta according to package directions. Toss hot pasta immediately with marinara sauce and bacon. Top each serving with ricotta mixture.

It's was really quick and tasty. I googled ingredients I had in the house and found this recipe. The red pepper flakes definitely add to the flavor and give it nice heat. I made mine organic, uncured and gluten-free. It turned out great. Thank you for sharing this recipe!
