Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

A simple, meatless pasta dish made with jumbo pasta shells, ricotta cheese, Parmesan, Mozzarella, and your favorite pasta sauce.
12 large pasta shells
1 cup pasta sauce
1 cup ricotta cheese
1 egg
1 teaspoon sugar
1/4 cup Parmesan cheese
1/4 cup Mozzarella cheese
2 teaspoons basil or parsley
Preheat oven to 350 degrees F.
Filling: Mix together the ricotta, egg, half the Parmesan, half the mozzarella, basil or parsley, and sugar.
Bring a large pot of water to a boil. Cook the shells for about 6 minutes, or unitl al dente. Drain well, being careful not to tear the shells.
Let the shells cool enough to handle then stuff them with the cheese filling.
Pour 1/4 to 1/2 cup sauce on the bottom of a casserole dish. Place the shells in the pan in an even layer. Top with remaining sauce. Sprinkle with remaining Mozzarella and Parmesan cheeses.
Bake at 350 degrees F, covered, for 45 minutes. Remove cover during the last 5 minutes and cook until bubbly and the cheese has melted.

I am just now starting to dabble in cooking....ashamed to admit, it is not my favorite thing to do. My husband loves stuffed shells so I thought I would give this recipe a try. Very easy to make...Can't wait to surprise him with dinner tonight!
