Slow Cooker Chicken Cacciatore With Red Wine Sauce

Mushroom and bell pepper packed cacciatore in the crockpot is a lifesaver. Rich from red wine and in a thickened sauce, this dish packs a stunning amount of flavor into a "set it and forget it" slow-cooker recipe.

2 tablespoons oil
3 pounds chicken breasts, boneless
salt and pepper, to taste
1/2 teaspoon black pepper
1 small onion, chopped
1 red or green bell pepper, seeded and diced
1 pound fresh mushrooms, thickly sliced
2 cloves garlic, minced
1/4 cup flour
1/2 cup dry red wine or red cooking wine
1/2 cup chicken broth
2 tablespoons tomato paste
1 can (14.5 ounce size) diced tomatoes, drained
1 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried thyme leaves
2 bay leaves

directions

Add onion and bell pepper to bottom of slow cooker stoneware. Add chicken, and then top chicken with remaining ingredients.

Cover; cook on Low 7 to 9 hours (High 4 to 5 hours). Remove bay leaves before serving.

    I served this on pasta with roasted garlic green beans and breadsticks…YUM. Easy peasy since it’s basically dump and forget, although about an hour in I opened it up and gave it a stir.

    This was super watery. Seems the flour did nothing. Ended up adding the rest of the can of paste. Disappointed.

    We don't drink alcohol so I just used a little tomato juice in place of the wine. Chickne was very tender and it all was very good.

    LOVE, love, love this recipe! Although, don' use cooking wine. Ew! Use a wine that you would drink (never cook with a wine you wouldn't also drink). One note, it just says to top chicken with remaining ingredients but you want to mix the flour into the broth or wine first then add it otherwise it'll be clumpy.
