Weeknight dinners don't have to be a hassle. This crock pot chicken cacciatore keeps things easy with a quick prep and the promise of a rich, savory dish that pairs nicely with pasta or rice.

ingredients

1 large onion, thinly sliced
1 1/2 pound skinless, boneless chicken breast halves
2 cans (6 ounce size) tomato paste
8 ounces fresh mushrooms, sliced
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cloves garlic, minced
1/2 teaspoon dried basil
1/4 cup dry white wine or chicken broth
1/4 cup water

directions

Place the onion slices in the bottom of the crock pot. Top with the chicken and mushrooms and bay leaf.

In a bowl, combine the tomato paste, salt, pepper, garlic, basil, wine, and water. Mix well. Pour the mixture over the ingredients in the crock pot.

Cover the crock pot and cook on low heat for 6 hours or until the chicken is cooked through. Remove the bay leaf. Serve over hot cooked pasta or rice.

    I thought this was good, however it is a bit bland as are a lot of crock pot recipes because of the long cooking time. I usually divide up the seasonings and add half initially and half during the last 30 minutes. Try that and the recipe will be better. Also, the tomato paste is a bit acidic so I use one can of paste and then 6 ounces of some spicy meatless pasta sauce.

    I followed this recipe to the letter and was quiet frankly unimpressed witht he final product. It was tneder and moist as you would expect but it just did not have any depth to the taste. This would be a good one for anyone that does NOT like spicy food. fp
