This is such an easy way to make a great roast. Boneless pork loin is simply seasoned with salt and pepper and then injected with slivers of garlic. The crock pot keeps the meat moist and tender. Serve it with your favorite side dishes.
5 pounds boneless pork loin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic, slivered
2 medium onions, sliced
2 bay leaves
1 whole clove
1/2 cup water
1 tablespoon soy sauce
Season the pork with salt and pepper. Cut slits into the pork on all sides and insert the garlic slivers into the slits.
Place half of the sliced onion in the bottom of the crock pot. Place the pork loin on top and add the remaining onions.
Add the bay leaves, clove, water, and soy sauce to the crockpot.
Cover the crock pot and cook on low for 4-6 hours or until the pork is tender. Remove the pork from the crock pot and slice. Discard the onions and seasonings in the crock pot or strain the liquid and thicken with cornstarch to make a gravy.s)

My family loved this. I made it just as directed (almost) and it turned out perfect. We eat our fair share of pulled pork soft tacos at the local mexican restaurant and this may have replaced those for us! Great to serve as a taco with cheese and pico. Yummm. I only had dried clove so I used that instead, between 1/4 and 1/2 tsp depending on your taste buds will work fine.
