This Boston butt roast might take a few hours but it's oh so worth it! Pork roasted with potatoes, carrots, and apples is guaranteed to hit the spot.
4 pounds Boston butt pork roast
salt and black pepper
8 potatoes peeled, and cut in half lengthwise
1 pound baby carrots
1 red delicious apple, cut in eighths

Place a roasting pan in the oven and preheat the oven to 350 degrees F.
Season one side of the pork roast with salt and pepper. Place, seasoned side down, in the preheated roasting pan. Place in the oven and bake for 20 minutes.
Season the top of the roast with salt and pepper and turn roast over. Lower the oven temperature to 325 degrees F. Return the roast to the oven and cook for 2 1/2 hours at 325 degrees F.
Turn roast over again and add the potatoes to the pan. Top the potatoes with the carrots and apple.
Add enough hot water to fill the bottom of the roasting pan to about 1-inch. Cover the pan with foil and return to the oven. Bake for 1 hour (or longer) until the vegetables are done and the meat falls apart easily. Add more water to the pan as needed.
Sear the pork roast on all sides in a skillet before roasting for added flavor.
Let the pork rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute.
Use a meat thermometer to make sure the pork is cooked to the correct temperature.
Baste the pork with the pan juices halfway through cooking.
Cut the potatoes uniformly for even cooking.
Cover the roast with foil to keep it moist and prevent the vegetables from drying out.
Add a splash of white wine or apple cider to the pan for added flavor.
Check the water level in the pan during cooking and add more if necessary.

This looks wonderful! What would you suggest for cooking times in a slow cooker? I really don't want to heat up my Arizona kitchen with my oven for this length of time. I might have to wait until winter when the temps drop to 70 to try this.
We haven't tested this recipe in a slow cooker. I'd recommend using the search function at the top of the site (just type in pork roast) and you'll find lots of other pork roast recipes that have been tested in the slow cooker.

This was delicious and tender and juicy. I used seasoned salt, onion powder, Mr. Dash onion, and dry onion soup mix rather than just salt and pepper. This was so tasty and made a great gravy. Thank you!!

Great recipe! Easy to follow directions with delicious results. I used cajun seasoning to spice it up just a bit. I used small red potatoes with skin and just halved them. Super moist and tender.

Great recipe!!! Juicy, tender and delicious!!! Only changes I made were to quarter the potatoes and to use the roaster lid rather than aluminum foil. My younger Grandson kept asking for more meat:)
