All Day Slow Cooker Herbed Pork Roast

The herbs are what really make this slow-cooker roast. Thyme, sage, and rosemary infuse the pork with a delightfully aromatic note, and flavor the apples as a little bonus.

3 pounds pork roast or tenderloin
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1 1/2 teaspoon dried rosemary
1 bay leaf
2 fresh basil leaves, chopped
1 apple, cored, and cut into quarters
salt and pepper, to taste

directions

Place the roast in the crock pot. Add the herbs and apple. Add enough water to just cover the roast. Sprinkle with salt and pepper as desired.

Cover the crock pot and cook on low heat for 4-6 hours or until the meat is tender. Remove the roast from from the crock pot and discard the cooking liquid. Carve the roast as desired.

    Very different way of cooking a pork roast. Liked the flavor, though I probably overcooked it as I set my crock pot to high (no medium setting) for almost 5 hours and the roast was 2 lbs only. Also, what can you do with the pork broth you get at the end? How do you make a gravy with it?

    I doubled the herbs and added the second batch of them in during the last 30 minutes of cooking for extra flavor. I also used seasoned salt instead of regular. The roast was done perfectly.

    I made this for Christmas dinner and it turned out really well. I added 1/2 tablespoon of vegetable paste and a chicken stock cube (although I'm not even sure it needed this extra cube afterall) I also added 2 apples instead of one. My In-laws really liked it as did the hubby, everyone went back for seconds! I made some roasted Brussell sprouts and roast potatoes to go with it and I made some really tasty gravy out of the juices. The house smelled delicious all day!

    I agree that it was rather bland, so I doctored it up with a couple of tablespoons of "Better Than Bouillon" (chicken base), extra herbs, an extra apple, and some minced garlic (dried). That helped considerably. I added some peeled, quartered potatoes as well.
