Serves/Makes:   1.25 cups

  

Ingredients:
1/2 cup brown mustard seeds
1/2 cup water
1 tablespoon fresh chervil
1 teaspoon fresh thyme
1 teaspoon fresh tarragon
1 teaspoon salt
1 tablespoon fresh squeezed lemon juice

Directions:

Process mustard seeds in food processor until powdery. Press processed seeds through a strainer to remove coarse bits. Bring the water, chervil, thyme and tarragon to a boil, reduce heat, and simmer for about 6-8 minutes.

Very carefully strain hot liquid mixture into the mustard seed powder. Becareful, as the fumes can be stron. Add salt and lemon juice. Let sit, refrigerated, for 2 weeks before using for flavors to blend.
