These jumbo chocolate chip muffins have a double dose of coffee flavor with instant coffee and coffee liqueur in the batter.

ingredients

6 tablespoons butter, softened
2/3 cup sugar
1/4 cup milk
1 1/2 teaspoon baking powder
1 3/4 cup unsifted all purpose flour
1 teaspoon vanilla extract
1 large egg
1 tablespoon instant coffee, dissolved in
2 tablespoons boiling water
1 tablespoon coffee flavored liquor, optional
3/4 cup chocolate chips

directions

Heat oven to 375 degrees F. Grease a 6 muffin pan.

In large bowl, beat on medium speed: butter and sugar till light and fluffy. Beat in egg, vanilla, dissolved coffee granules, and coffee liquor until blended.

In medium bowl, combine flour, baking powder, and salt. Add flour mixture to butter mixture alternately with milk, beating just until combined. Fold in chocolate chips. Divide batter among muffin pan cups. Bake 25 to 30 minutes or until centers spring back when lightly pressed. Serve warm.

    The recipe made 21 mini muffins and were done in 14 minutes. The instructions called for flour, baking powder and SALT to be combined. I could not find salt listed in the ingredients. I used one half teaspoon. They turned out fine.

    These are my favorite muffins! The first time I made these I was a little unsure of the texture (quite dense). I tried them again and I am addicted. They look as wonderful as they taste (nice large muffins). Definitely best when warm. I freeze mine and pop them in the microwave for 30 seconds when a chocolate craving hits. Delicious!!
