3/4 cup butter
3/4 cup granulated sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1/3 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
1 3/4 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
1 cup sour cream
milk (optional)
1/2 cup chopped walnuts
3 teaspoons cinnamon
Heat oven to 375 degrees F.
In a large. bowl, using an electric mixer, cream together the softened butter and 3/4 cup sugar. Blend in vanilla and eggs.
In another bowl, sift together flour, baking powder, baking soda, and salt. Pour flour mixture and sour cream into butter mixture. Stir batter by hand until ingredients. are blended. (If too dry, add splash of milk).
Grease muffin tins.
To prepare the topping: In clean bowl, mix together the walnuts, cinnamon and remaining 1/3 cup sugar.
Drop 1 Tbsp batter into each cup of muffin tin. Sprinkle each with 1 tsp. topping. Top with 1 more Tbsp batter. Sprinkle tops with another tsp. of topping.
Bake 15-20 minutes or until tester comes out clean.
