Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

1 pound dry Great Northern beans or other dry beans, soaked overnight and drained
1 large onion
1/2 teaspoon salt
1 cup molasses
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1 cup firmly packed brown sugar
1/4 pound bacon
Place beans in large kettle. Cover with water, sprinkle with 1 tablespoon baking soda. Bring to boil. Cook covered for 30 minutes or until beans are just tender. Drain; reserve liquid.
Combine salt, molasses, mustard, Worcestershire sauce and brown sugar. Place 1/3 of beans in crock pot with small amount of reserved liquid. Cover with 1/3 of molasses mixture. Place 3 slices of bacon on top. Place onion on top of this layer. Repeat layers; add part of reserved liquid with each layer. Cover beans with liquid.
Cook on low and for 8 to 10 hours or until beans are tender.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

First of all let me say this recipe is the best tasting beans I have ever made. I have tried tons of bean recipes over the years, trying to find a favorite but all were missing that one thing. I made a couple of changes: I used 1/2 lb of maple bacon and I used 1 big vadalia onion cut in fourths and put 2whole cloves into each. I misunderstood the directions though it said to bring to a boil and cook covered for 1/2 hour or just tender. I thought that meant keep it on high😳 it kept boiling over until the lightbulb in my head said duh!!! Lower the heat silly. 😋so by that time the beans were already cooked I kept doing the recipe though. I cooked on low in the crockpot for about 5 hours and they were a little mushy but wee so yummy I didn't care. Hubby loved too. I am making them again this weekend. Will be ecstatic if they come out great this time. I am hoping this will be "the recipe" finally.
