ingredients

6 cans (1 gallon size) pork and beans
3 pounds brown sugar
3 bottles (32 ounce size) ketchup
1 pint prepared mustard
1 pound bacon, chopped
1 package (16 ounce size) frozen chopped onions (no need to thaw)
salt and pepper, to taste

directions

Preheat the oven to 350 degrees F.

Combine the pork and beans, brown sugar, ketchup, mustard, bacon, onions, salt, and pepper. Mix well to dissolve the brown sugar. Pour into multiple baking dishes or 2 deep hotel pans (12x20x2-inches).

Place the pans in the oven and bake at 350 degrees F for 1 1/2 hours (if using a convection oven, cook for 30-45 minutes).

Adjust the seasoning as needed. Serve the baked beans hot.

recipe tips

To add flavor, consider sauteing the bacon and onions together before adding them to the beans.

Using dark brown sugar instead of light brown sugar can give a richer molasses flavor to the beans.

For a tangy twist, add apple cider vinegar or Worcestershire sauce to the bean mixture before baking.

If the beans are too thick after baking, stir in a small amount of water or apple juice to reach desired consistency.

To make this dish healthier, look for low-sodium versions of the pork and beans, ketchup, and prepared mustard.

For a different flavor, substitute half of the ketchup with barbecue sauce.

Adding a bay leaf or two to the beans while they bake can introduce an additional layer of flavor (just remember to remove them before serving).

common recipe questions

How can I make sure the brown sugar is fully dissolved in the mixture?

Mix the brown sugar with the ketchup and mustard before adding to the beans, stirring until smooth to make sure it dissolves completely.

Can I substitute the pork and beans with another type of beans?

Yes, you can use other canned beans like navy or pinto beans, but you may need to adjust seasoning since pork and beans come in a seasoned sauce.

Is there a vegetarian option for this recipe?

For a vegetarian version, omit the bacon and use a vegetarian baked bean variety. Add a bit of liquid smoke or smoked paprika for the smoky flavor that bacon provides.

How do I prevent the baked beans from drying out in the oven?

The beans shouldn't dry out, but if they do start to seem dry, cover the baking dishes with foil for part of the baking time to retain moisture, then remove the foil to allow the top to brown and caramelize.

What can I use if I don't have hotel pans?

You can use any large, oven-safe baking dishes or roasting pans. Make sure they are deep enough to hold the mixture and prevent spills.

Can I prepare these baked beans ahead of time?

Yes, you can assemble the beans a day in advance and refrigerate. Increase the cooking time slightly if baking from cold.

How can I make the baked beans spicier?

Add diced jalapenos, chili powder, or hot sauce to the mixture before baking for a kick of heat.

What's the best way to serve baked beans for a large crowd?

Set up a serving station with a large spoon or ladle for easy serving. Keep the beans warm in a chafing dish if they won't be served immediately.

How should I store leftovers?

Cool the baked beans completely and store them in airtight containers in the refrigerator for up to 5 days. They can be reheated in the oven or microwave.

Can I freeze leftover baked beans?

Yes, baked beans freeze well. Portion them into freezer-safe containers and freeze for up to 3 months. Thaw in the refrigerator overnight before reheating.

I need recipe for 100 but only show 200, i changed to 100 servings which was easy but dont know how to refigure the cooking time , half the the time for 200 and not sure what pan size makes a difference I am using the catering pans foil 20x15x3

    • If you halve the recipe to serve 100 then you'll only need one pan of that size and the cooking time won't change.
